The more I keep cooking, the more creative I want to be. Robert keeps saying that homemade mac and cheese is his favorite, and since we were having BBQ this weekend, I wanted to see if I could make homemade mac and cheese. I’m really proud of the results and I even got hubby’s seal of approval. For a man who is picky about his foods, that is quite the seal!
Baked Three-Cheese Macaroni

2 tablespoons butter or margarine
1 cup shredded sharp cheddar cheese
3/4 cup milk
4 ounces American cheese *cut into 1/2 cubes
1 1/3 cups dried elbow macaroni
1/4 cup shredded mozzarella cheese
1/4 teaspoon ground white pepper (I didn’t add this as I react to pepper, but this addition sounds too good for me to leave it out)
Cook the macaroni while preheating the oven to 350 degrees. Once cooked, strain the pasta and combine all ingredients. The recipe says to put milk, pepper, and butter first and then stir in the cheeses.
Once fully mixed, put into a casserole dish and bake for 15 minutes. Do not cover the macaroni. After 15 minutes, pull it out and mix slightly, then put in the oven for another 5 minutes.
The recipe warns not to over bake because the mixture will curdle.
Now that it’s heated throughout you are ready to serve!
